Dining Service - Thorne Hall
Job Summary
Located in Brunswick, Maine, Bowdoin College boasts a student population of almost 2000. Our Dining Services Department makes everything from scratch and are consistently rated in the top 10 for college dining! We have our own butcher shop, bakeshop, and organic garden that all supply food to our two dining halls and three retail locations.
Under supervision of Head Chef and Purchaser, the Meat Cutter will provide service and expertise for board, cash and catering operations. The main responsibilities include, but are not limited to:
- Butchering and/or breaking meat products down into appropriate cuts as specified in daily kitchen orders i.e. preparing ground meat or steaks; cutting or stripping chicken, boning pork and specialty meat cutting
- Ensuring quality and safety of food supply by proper thawing of products as well as proper handling and rotation and timely use of stock
- Consistently using safe meat handling procedures such as sanitizing between processing meats and poultry, keeping meat products cold throughout processing and following HACCP and state regulations pertaining to production, storage, and handling of products
- Coordinating production of daily meat items for all dining venues for the purpose of the board plan and catering needs
- Reading recipes and preparing to specifications
- Performing task support in multiple culinary departments such as cold foods or bake shop including preparing ingredients for use in recipe production, operating cold food and short order cooking equipment, and serving or replenishing foods on the hot and cold serving lines.

Education/Skills Requirements
- High school diploma or GED required
- Associate’s or vocational/technical training preferred
- Proficiency in basic MS Office Suite (Word, Excel, PowerPoint, Outlook) preferred
- Proficiency in basic CBORD Software preferred
- Proven ability to work independently, prioritize production, and shift priorities as needed to meet the needs of the Dining operations
Experience Requirements and/or Equivalents
- 4 to 7 years of experience in food preparation with at least 2 to 3 years of cooking and/or meat cutting experience preferred.
- ServSafe certification preferred or must be obtained within 3 months of employment.
Standard Work Days and Hours
- Based out of Bowdoin College campus in Brunswick, Maine, this is a full-time, onsite position working 40 hours per week for 52 weeks (1.00 FTE)
- The work schedule is as follows:
- Monday – Thursday: 7 am – 3 pm
- Friday: Off
- Saturday: Off
- Sunday: 7 am to 3 pm
- Please note that this is an essential role with requirements to work occasional overtime, holidays, and during weather emergencies, in addition to major college events and weekends (i.e., Parent’s Weekend, Commencement, and Reunions).
